Laura Crawford is a wife, soon to be mother, chef and food writer on a mission to inspire others to crave a healthy lifestyle- from food, to fitness, to marriage, to finances, to fun. Laura has a long and unique journey by which she discovered that in order to be healthy in all areas of life, one does not need to compromise flavor, joy, excitement and fun.
About the food:
Laura grew up with little to no understanding of what it meant to lead a healthy lifestyle, and was obese by the time she was in high school. From eating disorders, to brain surgery, to being diagnosed with a severe case of Celiac Disease, Laura realized that she had to take control of her lifestyle and do whatever it took to get healthy.
Because she loved food so much, and grew up with some of the best training in her own mother’s kitchen, Laura determined that she find ways to make health taste good. She realized that so often, the lack of flavor and fun in “healthy” food was one key component in the failure of so many to stick to a healthy lifestyle.
Laura later studied at Escoffier School of Culinary Arts where she was able to learn the science of cooking and baking, the unique methods of substitutions for those with allergies, and the fun and excitement of understanding tones and flavors and principles that create a platform for delicious food.
You will find that most of the recipes in her collection are gluten free, as she does suffer strongly from Celiac Disease, but you will also find that she loves to play and believes that everyone deserves a good sweet treat every now and then.
About the fitness:
For many years, during her struggle with obesity and eating disorders, Laura tried everything she could to lose weight- including excessive exercise. Much to her disappointment, Laura learned that exercise alone- although she became quiet strong and built much endurance- would simply not do the trick. It took some time, but she learned that a healthy weight loss journey had to start in the kitchen, and all exercise was mean to accompany that journey. Although she did not grow up doing sports or being active, Laura has grown to love being active, and can barely sit still these days. She and her husband are runners, and on her own Laura enjoys yoga and pilates, as well as some weight training.
About the marriage:
Laura met her husband, Daniel, in May 2013 after returning home from the mission field in Rwanda, East Africa. Laura was not interested in dating, and had little to no interest in getting to know Daniel. A year later, while determining whether or not to go to nursing school, Laura was in desperate need of a math tutor and Daniel came to the rescue. It didn’t take long for the two to fall in love. The became engaged on February 13, 2015, and married 7 months later on September 12, 2016. Daniel is a successful business man and manager, and is currently developing his own training program for effective management. Laura and Daniel are firm believers in honesty and integrity in their relationship, and have fought hard to keep Jesus at the center of their marriage. Laura enjoys sharing the lessons that God teaches them, and has a hope that their marriage, in all its weaknesses, would someday inspire others.
Laura and Daniel came from completely different backgrounds regarding finances. Naturally, this was a source of fear and complexity in their relationship, but Daniel came up with a way to make budgeting fun, and led the two out of the first of many debts. They now love and even look forward to budgeting each month. Laura has a passion for budgeting and meal planning, and utilizing sales and ads to make the most of their grocery budget- and hopes to help others feel free from any worry or anxiety they may have about that one area of budgeting! She also loves to just help people save money on groceries so they can get more food- because everyone loves more food!
